Pork Chop Rimini Style

1 tablespoon all-purpose flour
4 oz grated cheese
3/4 cup water
1 tablespoon balsamic vinegar
16 oz mushrooms
1/2 stick of butter
6 pork chops, medium size
1/2 cup of Madeira wine
1/2 cup heavy cream
2 tablespoons vegetable oil
1/3 cup shallots, diced
1/2 teaspoon dry herbs
salt and pepper to taste
Recipe
Whisk flour, vinegar, and water until smooth. Set aside. In saucepan, heat oil over medium heat. Add the pork chops, and cook about 6 minutes, turning once. Transfer pork chops to a warm place and cover. In another pan, melt the butter over medium high heat. Add shallots and cook one minute, stirring often. Stir in all mushrooms with salt and pepper and dry herbs. Cook stirring often, until the liquid has almost evaporated. Stir in Madeira wine, and cook until pan is almost dry. Stir in cream. Boil one minute. Remove from heat and cover. Into drippings in skillet, stir vinegar mixture. Cook over medium heat stirring constantly until sauce thickens slightly and boils. Sprinkle each pork chop with the grated cheese. Return the pork chops to the skillet. Cover and simmer until cheese just melts. Cover each plate with the mushrooms and cream. Add the pork chops on top. Enjoy!
