    List of Ingredients




    ½ kg of pork loin - trim off sinew and fat
    400ml of full fat milk
    4 cloves of garlic
    3 strips of lemon zest
    8 small sage leaves
    2 whole carrots, roasted with a little butter and chopped rosemary
    Olive oil
    1 tbsp of butter
    One head of Spinach cooked with a little garlic and olive oil

    Season the pork with salt and pepper. Add one tbsp each of olive oil and butter into a pot and then lightly brown the pork. Add the milk, lemon zest, 3 cloves of garlic and sage. Place the lid on the pot and cook for 15-20 minutes, turn every 5 minutes. The lemon zest will make the milk curdle and by the time the pork is cooked it will form curds and delicious juices.

    Thinly slice one clove of garlic and brown in a hot pan with oil. Gently cook till golden then add the spinach. Toss around and season with salt and pepper.

    To serve place the spinach and carrots on a plate, add the sliced pork and pour on the curds and juices. Enjoy!
