3 lb BONELESS SHOULDER BUTT ROAST 1.5 kg
1 large onion, chopped 1
3 celery stalks, chopped 3
14 oz can tomato sauce 398 mL
1 cup chicken broth 250 mL
4 potatoes, peeled and cut into large chunks 4
2 parsnips, halved lengthwise 2
1/2 medium rutabaga, peeled, cut into chunks 1/2
1 tsp black pepper 5 mL
1/4 tsp cayenne pepper 1 mL
Recipe
In a roasting pan, combine onion, celery, tomato sauce, broth, potatoes, parsnips and rutabaga. Mix well. Place pork roast on top of mixture. Season meat with pepper and cayenne. Cover and roast at 350F (180C) for 1 1/4 - 1 1/2 hours. Serve with a green vegetable and/or coleslaw.
