List of Ingredients
2-4 one inch thick NY Strip Steaks
1/2 cup heavy Whipping Cream
2 tbsp. fresh cracked peppercorns
1-tbsp Dijon Mustard (excuse me....could you pass the Grey Poop-on)
2-tbsp Cognac or Brandy
1-tbsp olive oil
1-tbsp saltRecipe
Apply salt and crushed peppercorns liberally to both sides of steaks rubbing it into the grain using the back of a spoon.
heat olive oil in a black iron skillet to 300 or so (saute temp)
add the steaks and cook on each side to desired tenderness about 3-4 mins each side for med rare)
when steaks are ready add the cognac or brandy and light it with a long match or a grill lighter (beeeeeeeeeee careful....dont light you're beard on fire dubass hahahahaha)its called "Flambeau"
the fire should go out in just a few seconds as soon as the alcohol burns off....
remove the steaks to a warm plate and to the juices left in the pan add the Whipping Cream and the dijon Mustard...
Stir constantly until thickened adding more peppercorns if you like ( i do!!)
pour over the Steaks and Serve hot!
