    1/2 pound pork breakfast sausage

    1 package plain instant grits*

    1 cup water

    1 cup skim milk

    3 eggs

    1/2 teaspoon dry mustard

    1/2 teaspoon hot pepper sauce, optional

    3/4 cup shredded sharp cheddar cheese

    Recipe



    Heat oven to 350 degrees. Brown pork in a nonstick skillet until no longer pink, breaking up with a wooden spoon as it cooks. Drain and set aside to cool.

    Combine the instant grits and water in a microwave-safe bowl. Microwave on high for 3 minutes, until grits begin to thicken. Set aside to cool.

    Combine the milk, eggs, dry mustard and hot pepper sauce in a medium bowl. Add the sausage, cooked grits and shredded cheese. Pour into a glass baking dish and bake for 45 to 50 minutes, until the center is set and the pie bubbles around the edges. Set aside 10 minutes before serving.

    Makes 6 servings.

    *One package of instant grits contains a scant 1/3 cup of grits.
