    * 1 tsp salt
    * 1 1/2# lean ground beef
    * 1 large onion, chopped
    * 2 cloves garlic, minced or pressed
    * 1/4 tsp pepper
    * 1 cup yellow cornmeal
    * 12 oz can whole kernel corn, drained
    * 12 oz tomato paste
    * 10 oz can enchilada sauce
    * 4 oz can diced green chiles, drained
    * 1 Tbl chili powder
    * 6 oz can pitted ripe olives, drained
    * 1 cup milk
    * 1 1/2 cups (6 oz) shredded cheddar cheese

    Sprinkle salt in a wide frying pan over medium heat; when hot, add beef and cook until browned and crumbly, then stir in onion and garlic and cook until onion is soft. Remove from heat and discard excess fat. Stir in the pepper, cornmeal, corn, tomato paste, enchilada sauce, chiles, chili powder, olives, and milk. Pour into a greased shallow 3 quart casserole. Bake, uncovered, in a 350 degree oven for 30 minutes. Sprinkle cheese evenly over top and continue to bake for 5-10 minutes longer or until cheese is bubbly. 6-8 servings.
