Southwestern Pork Tenderloin

List of Ingredients
Marinade for the Pork:
2 cups salad oil
Juice of 6 limes
1/2 onion, chopped
4 cloves garlic, minced
1/2 cup cilantro, chopped
1 tsp. cumin
1 tsp. chile powder
Salt and pepper to taste
Black Beans:
3 cups black beans, tender
1/2 onion, diced
3 cups chicken stock
1/4 cup cilantro
1/2 tsp. cumin
1/2 tsp. chile powder
Salt and pepper to taste
Chipotle Sauce:
2 cups heavy cream
1/2 tsp. chipotle in adobo sauce puree
Also Needed:
1/2 cup Montrachet cheeseRecipe
Marinate pork for 4 hours. Grill pork until medium in the center. Sauté onions for the black beans in a small amount of oil. Add beans and remaining ingredients and simmer until liquid is absorbed. For the sauce, reduce the cream and chipotle puree until proper sauce consistency (nappe). Spoon beans on a serving plate and place sliced pork on top. Sprinkle Montrachet cheese on top of pork and finish with the chipotle sauce.
