Stir-Fried Beef with Mangoes

List of Ingredients
1½ pounds flank, rib eye or New York steak, frozen for 15 minutes if time
2 tablespoons white wine vinegar
2 tablespoons soy sauce
Pinch of sugar
3 medium red chiles, de-seeded and minced
4 cloves garlic, minced
1 1” piece fresh ginger, peeled and either julienned or grated
2 tablespoons vegetable oil (grapeseed or peanut work best)
1 large, ripe mango -- peeled and sliced
½ bunch fresh cilantro, washed and roughly choppedRecipe
If possible, freeze the flank steak for 15 minutes to make it easier to slice. Slice the meat thinly.
In a bowl, stir together the white wine vinegar, soy sauce, chopped chiles and sugar and add the sliced steak. Mix well and, if possible, allow to marinate for 10 minutes or so.
Heat a wok to very hot, add the oil. Add half of the garlic, half of the ginger and stir. Lift half the meat from the marinade and cook it in the wok, stirring constantly, for about 3 minutes, until done. Remove the first batch to a plate and repeat with the remaining meat. Remove the second batch of meat and add the marinade to the wok, allowing the mixture to boil hard and reduce to a saucy consistency.
Add back the meat, along with the mango slices and toss. Taste and correct the seasoning. Toss in the chopped cilantro at the last minute and serve over rice.
