    Stroganoff Stuffed Potatoes

    4 medium baking potatoes
    1 onion, chopped
    6 medium mushrooms, sliced
    1 T. butter or margarine
    1 pound grilled sirloin steak (or any leftover beef), cut into bite-sized pieces
    1 can (14 1/2 oz.) mixed vegetables, drained
    1 cup sour cream

    Recipe



    Pierce each potato with a fork; place on paper towel in microwave oven. Microwave on HIGH about 16 minutes or until tender; rotating once.

    Meanwhile in large skillet on stovetop, cook onion and mushrooms in margarine until tender. Add meat and vegetables; heat through. Remove from heat and stir in sour cream.

    Split tops of potatoes; fluff insides with fork. Season with salt and pepper, if desired. Spoon meat mixture over potatoes. Yield: 4 servings.
