2 Tbsp peanut oil (can substitute vegetable oil)
1 in, piece ginger root (peeled,grated)
2-4 Thai chiles finely chopped
1 1/2 lbs. pork tenderloin cut in strips
1 red bell pepper cut in strips
1 yellow bell pepper cut in strips
6 scallions, trimmed and sliced
1 Tbsp tomato paste
1 Tbsp water
2 tsp soy sauce
1 tsp honey
1 tsp sesame oil
Recipe
Heat oil in wok and stir-fry ginger and chiles for 2 minutes over high heat. Add pork and stir-fry for 4-5 mintes. Add peppers and cook for 2 minutes. Add scallions and stir-fry for 30 seconds. Add tomato paste blended with water, soy sauce, and honey.Stir-fry for 1 minute. Add sesame oil and stir-fry until all ingredients are well blended. Serve immediately with rice. Serves 4.
