1 1/2 pounds extra-lean ground beef
1 teaspoon salt
Pepper to taste
1 egg, beaten
1 medium onion, finely chopped
A few strips of green bell pepper, finely chopped
8 soda cracker squares, finely crushed
1 1/2 slices bacon (cut the full slice of bacon in half so you have 3 half-slices)
Recipe
Preheat oven to 350 degrees.
Season meat with salt and pepper. Add egg, onion, bell pepper and crackers. Mix well with hands. Form into loaf and place in shallow baking dish. Lay bacon strips over meat.
Cover with foil and bake in preheated oven 1 hour. Remove cover and bake an additional 30 minutes or until done. Makes 6 servings.
