125g (5oz) butter
250g (9oz) plain flour
25g (1oz) demerara sugar
1 egg yolk, medium
cold water to mix
FILLING
450g (1lb) cooking apples, peeled and sliced
50g (2oz) demerara sugar
5ml (1tsp) ground cinnamon
grated rind of one orange
1 egg (medium), mixed with a little milk to glaze
demerara sugar
Recipe
For the pastry rub the butter into the flour until the mixture resembles breadcrumbs. Stir in the sugar and bind with the egg yolk.
Add enough cold water to make a soft but not sticky dough. Chill in the fridge whilst making the filling.
For the filling, combine the apples, sugar, cinnamon and orange rind in a large bowl. Cook for 4 minutes on 100% microwave power. Drain any excess liquid.
Line the base of a greased, microwaveable pie plate (approx. 23cm diameter) with half the pastry. Cook for 7 minutes on 50%.
Spoon in the apple mixture, roll out the remaining pastry and cover.
Pinch around the edges to seal, make a slit in the centre with a sharp knife.
Brush all over with the egg mixture to glaze and sprinkle generously with sugar.
Place on the low rack and cook for 20 minutes using DUAL CONVECTION 220°C, 30% microwave power.
