Eggplant is a funny thing. People either love it or loathe it. I'm passionately in love with it.

½eggplant, sliced lengthwise

¼cup finely diced red onion

1 garlic clove, minced

2 tablespoons chopped parsley

1 tablespoon diced, roasted red peppers

1/8teaspoon salt

1/8teaspoon pepper

1 teaspoon lemon juice



Recipe



Leaving the shell intact, scoop the pulp from the eggplant and roughly chop; reserve the shell. Put in a small microwave-safe bowl along with the remaining ingredients and microwave mixture for 2 minutes.

Put mixture back into shell and place shell in a microwave steamer with ¼ inch water in microwave for 2 more minutes.

Drizzle lemon juice over mixture.
