SUN-GLAZED CHICKEN

4 boneless, skinless chicken breast halves
2 tbsp. honey
½ tsp. salt
½ tsp. dry mustard
1 ¼ tsp. paprika
1 tbsp. lemon juice
1 tsp. tarragon leaves
4 tbsp. melted butter
Recipe
Rinse chicken breasts and remove any fat. Place in baking dish. Combine remaining ingredients for glaze. Brush glaze mixture on both sides of breasts. Bake at 375 degrees for 10 minutes. Flip breasts over and brush with glaze again. Bake another 10 minutes. Turn again and reglaze. Bake 5 to 15 minutes longer, until juices in chicken run clear.
Serve hot or at room temperature.
Microwave instructions: Rinse chicken breast, leaving skin on for better appearance. Remove excess fat. Pat dry.
Place in microwave-safe dish.
Combine glaze ingredients. Using half, brush both sides of chicken breasts. Arrange breast-side down with meaty portions along outside of dish. Cover tightly.
Microwave on high power for 4 minutes. Turn chicken over, again with meaty portions along the outside edge. Cover tightly. (Remember to keep an eye on the chicken because microwaves vary).
Microwave on high for 6 minutes until done. Check meatiest breast by making a small cut. If no pinkness remains, chicken is done.
For higher color, place chicken on broiler pan, skin-side up. Brush generously with glaze. Broil about 6 inches from heat until golden and a little crispy, basting often.
