    List of Ingredients




    2 oz Extra Virgin Olive Oil
    1 t. Garlic, finely chopped
    4 each Artichoke Hearts, quartered
    1 whole Red Bell Pepper, roasted & seeded
    1/3 cup Wild Mushrooms, sliced
    8 each Asparagus Spears, cut on bias
    2 oz White Wine
    2 each Scallions, sliced
    1 oz Basil, chiffonade
    2 cups Spinach, fresh & destemmed
    3 cups Penne Pasta, al dente
    2 T. Parmesan, grated
    Kosher Salt & Freshly Grated Pepper to taste

    Recipe



    In a saute pan, heat olive oil. Sautee garlic until slightly brown, then add ingredients in order above. Plate and serve. Enjoy!
