Spinach pasta
Enough butter for sauteing
3 cloves garlic - minced
1 bunch scallions - chopped
Exotic mushrooms - sliced - Portobello, Chantrells, etc.
6 Italian tomatoes - seeded and chopped
Hot Italian sausage - sliced
1 lb. Rock shrimp (marinated in minced garlic butter and white wine - scallions)
2 lb. lump of crab
Big splash white wine
Big splash lemon juice
1 cup or more whipping cream
1 red bell pepper - sliced and diced
1/4 to 2 cold butter cut in pats
Chopped parsley
Salt and cracked black pepper to taste
Recipe
In heavy bottom pan - heat - melt butter over medium high heat. Add sausage, garlic, mushrooms, red peppers, tomatoes, and green onions and saute' for about 5 minutes.
Add shrimp and crab meat and saute' for a couple more minutes.
Deglaze pan with lemon juice and white wine and reduce liquid by half.
Add whipping cream - stirring - reducing until cream is sauce like for about 5 minutes.
Add chopped butter, 2 to 3 pats at a time, swirling pan constantly until butter is all incorporated.
Remove from heat. Add parsley and season with salt and pepper.
Serve over pasta.
