Blackened Chicken Penne

(4) 6 ounce boneless chicken breast
1 pound Penne noodles (cooked)
1 cup chicken stock
1/2 cup white wine
2 cups sliced mushrooms
2 cups diced tomatoes
1 cup sliced red onion
2 tablespoons minced garlic
1/2 cup cajun blackening spice
3 tablespoons olive oil
1/4 cup shredded parmesan cheese
Cajun Blackening Spice
5 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon white pepper (ground)
1 teaspoon dried thyme (crushed)
1 teaspoon dried oregano (crushed) Recipe
Season chicken breasts with cajun blackening spice, grill seasoned breast while preparing pasta. In large skillet, saute red onion, mushrooms and garlic until tender. Add chicken stock, white wine and 2 tablespoons blackening spice. Bring to boil, add cooked penne noodles, diced tomatoes, toss and cook until thickened. Arrange pasta on serving dish, top with grilled chicken breast. Garnish with fresh shredded parmesan cheese.
