    # Ravioli: 1 Roasted Butternut Squash
    # 1/2 caramelized onion
    # 1/2 tub Mascarpone
    # 1 cup Parmesan
    # 1/4 cup brandy
    # salt and pepper

    Ragout:
    # 1 oz Rock shrimp
    # 2 asparagus spears
    # blood orange segments
    # 1/4 tsp. Garlic
    # 1 oz White wine
    # 2 oz butter
    # Fried leeks

    For ravioli: Chop squash and onions in the buffalo chopper. Put into mixing bowl and mix with cheeses and brandy. Spoon 1 1/2 tsp mixture onto 2 1/2 inch pasta circle. Egg wash the edges and seal with another pasta circle. Saute rock shrimp with garlic and asparagus. Deglaze with wine and add the orange segments. Finish with butter and spoon onto center of plate. Top with ravioli and garnish with orange segments and fried leeks. Makes about 30 raviolis
