    CITRUS-CHERRY PORK and PASTA

    1 lb pork tenderloin, cut into 1/2-inch cubes
    1 t. vegetable oil
    1/2 sweet yellow onion, thinly sliced
    2T. orange juice
    2T. balsamic vinegar
    2T. olive oil
    1/4 t. salt
    1/4 t. black pepper
    1T. grated orange zest
    8 oz. mostaccioli, rigatoni or penne, cooked and drained.
    3 c. broccoli florets, steamed
    1/2 c. dried cherries
    1/3 c. walnuts, coarsely chopped

    Recipe



    1. Steam broccoli, slice onion, chop walnuts and set aside.

    2. In a large nonstick skillet, heat vegetable oil over medium-high heat.

    3. Add pork cubes and onion; cook and stir 3-4 minutes or until pork is nicely browned and onion is tender; set aside.

    4. Make dressing by shaking together orange juice, vinegar, olive oil, salt, pepper and orange zest in a small jar with tight-fitting lid.

    5. In a large serving bowl, toss together the pork and onion, pasta, broccoli, cherries and walnuts with the dressing.

    Serve immediately

    Serves 6.
