1 lb spaghetti
3 Tbs extra-virgin olive oil
1 cup julienne red onion
1/2 lb pancetta or bacon
1 cup grated Parmigiano Reggiano
4 egg yolks
1/4 cup chopped flat leaf parsley
salt and fresh-ground black pepperRecipe
Cook pasta in plenty of boiling salted water until al dente.
Meanwhile, heat a large sauté pan and add olive oil, onions, and pancetta.
Cook until onions are soft and pancetta just starts to crisp, about 4 minutes.
Add parsley and season to taste.
When pasta is ready, add it to the pan and toss.
Add about 1/3 cup pasta water, yolks and Parmesan cheese.
Mix everything quickly so as not to curdle the yolks.
