List of Ingredients
½ Bottle of Chef Dad's® Pasta Sauce / Marinara
6 Boneless skinless chicken breasts
1 lb. Box of "Bowtie" or your favorite large pasta noodles
1 15oz. Can diced tomatoes
2 Cups Fresh mushrooms, your favorite (diced)
1 lb. Double cream Brie cheese (outer coating removed)
1 Cup olive oil (not extra virgin - regular olive oil)
¼ Cup fresh Cilantro leafs (chopped fine)
8 Large fresh basil leafs (chopped fine)
6 Garlic cloves diced (approx. 3-4 tablespoons)
¼ Cup Parmesan cheese (grated)
Salt, Pepper, Garlic Salt, Emeril Lagasse's Southwest Seasoning
1 tsp. Hot red pepper flakes
4 Tbl. Salted butter (2 Tbl. for mushrooms & 2 Tbl.for pasta)
Recipe
1) Preheat oven to 350 degrees.
2) Getting everything ready - you're "prep work" includes chopping your basil and cilantro, draining your tomatoes, dicing your mushrooms, removing the outer cover from the Brie and cutting into small chunks and dicing your garlic. Put these items into small bowls and set aside until final assembly.
3) Rub chicken with olive oil then season with salt, pepper & Emerils Southwest seasoning. Put in covered casserole dish (Dutch Oven) and place in oven for 30 minutes.
4) Sauté mushrooms with butter, salt & pepper until tender, then set aside.
5) Bring large pot of salted water to boil and cook pasta.
6) After pasta is cooked, drain well and mix in bowl with salted butter. Cover with towel and set aside.
7) Take chicken from oven and dice in small (1") pieces - cover and set aside.
8) In a large non-stick pot, heat olive oil over medium high heat. Have all your ingredients ready because this sauce comes together quickly. When oil is hot, put in basil, cilantro & garlic for 30 seconds. Next, add pasta sauce, tomatoes, mushrooms & cheese & mix well. Then add chicken and stir well. Now add pasta and mix well. Finally, add red pepper flakes, garlic salt & pepper to taste ("to taste" literally means adding a little of each seasoning at a time until you think the taste is perfect).
9) Sprinkle grated parmesan cheese over top & serve.

If you've read my recipes, you know I usually avoid doing ones that take extra time and ingredients, but I have to tell you that this recipe is worth the extra effort. Try it!
