    Chicken Rigatoni with Spinach & Mozzarela Cheese

    List of Ingredients

    1 lb. (16 oz.) Ronzoni Rigatoni
    2 tbs. olive oil (divided)
    1 ½ lb. chicken cut in 2-inch cubes
    1 medium onion (diced)
    1 garlic clove (chopped)
    2 jars (28 oz. each) tomato sauce
    2 bags (10 oz. each) fresh spinach cleaned and shredded
    4 cups (16 oz.) Shredded mozzarella cheese
    1/8 tsp. salt & pepper

    Recipe

    Heat olive oil in a large skillet, add chicken and cook until lightly browned. Place cooked chicken to the side. Cook pasta according to package directions, drain. Meanwhile, heat olive oil and sauté onions and garlic until soft, add tomato sauce and simmer 8 minutes, add cooked chicken & spinach and continue to simmer additional 2 minutes. Toss together pasta, chicken, sauce mozzarella and salt & pepper. Serve immediately.
