4 red bell peppers
1 bunch fresh dill, washed and finely chopped
1 onion, diced
1 quart tomato purée
1 quart peeled tomatoes
8 oz. tomato paste
1 lb. fresh meat tortellini
1 cup grated parmigiano cheese
1/2 lb. butter
4 oz. virgin olive oil
black pepper and salt
Recipe
Broil 4 red bell peppers at 350° for 5 minutes, turning every minute. Let pepper cool to touch, peel off skin, and dice. In a gallon pot with a heavy bottom, melt butter and olive oil, sauté onions to golden color. Add roasted peppers for 5 minutes. Add tomato paste, peeled tomatoes, tomato purée and dill, stirring every five minutes. Add salt and pepper to taste. Cover and simmer on a small flame for 30 minutes. Let sauce cool and purée in a food processor or blender. Boil tortellini for 6 minutes. Drain, return to pot, add three ladles of sauce and 1/2 cup parmigiano cheese. Stir, serve on a plate, ladle over sauce and finish with parmigiano cheese and a sprinkle of black pepper.
