Fettuccini From Joe's Garage

List of Ingredients
8 oz. Fettuccini(fresh)
2 Tbsp. olive oil
1 Tbsp. garlic-minced
1 c. shallots-minced
6 ea. cherry tomato (cut in 1/2)
1 c. veggie stock
1/2 c. gorgonzola (crumbled)
12 ea. gulf shrimp
1 c. fresh spinach(stems picked)
1/2 c. toasted walnuts (skins rubbed off)
Recipe
Saute the garlic, shallots and mushrooms in olive oil over high heat until the mushrooms are soft. Add tomato, veggie stock, gorgonzola and shrimp, cover and cook until shrimp is done. Toss with fettuccini, spinach and top with walnuts.
