    Fettucine with Cabo Wabo Tequila sauce

    List of Ingredients




    1 pound of fettucine, fresh
    1 pound chicken breast, cubed
    4 ounces sun-dried tomatoes, oil-packed
    8 ounces broccoli florets, blanched
    4 cloves garlic, sliced
    2 tablespoons olive oil
    1 1/2 cups heavy cream
    1 bunch cilantro leaves, chopped fine
    4 ounces Cabo Wabo Tequila
    Salt and Pepper to taste

    Bring a 3 quart saucepan full of water to boil and addd a fist full of salt to the water

    In a large skillet over high heat, add the olive oil. When the oil is hot add the chicken breast cubes and begin to cook. When the chicken begins to turn white, with a spoon scape the bottom of the pan so that the chicken doesn't stick, salt and pepper the chicken to taste. When the chicken is almost fully cooked, add the sliced garlic and continue to cook for 1 minute. Then add the sun dried tomatoes, and the Cabo Wabo Tequila ( NOTE: if you are using a gas stove the Tequila will probably ignite and flambe the sauce, its a good thing but be careful!! ).

    When the Tequila sauce has reduced by half, add the cream, blanched broccoli and cilantro and continue to cook until the sauce thickens. Salt and pepper to taste.

    Add the fresh fettucine pasta to the boiling water and cook until done approximately 4 minutes or until all done. (follow the directions on the packaging different brands of pasta cook differently, other cuts of pasta work well too). Strain the pasta and mix with sauce, add parmesan cheese to taste.

    Makes 4 servings
