with Spicy Cheese Sauce
List of Ingredients
Pasta:
1 pound flour plus 6 tablespoons
1/2 cup cooked canned pumpkin
2 eggs
Sauce:
1 cup Benedictine and Brandy
1 cup heavy cream
2 cups of four cheeses
4 good dashes Louisiana hot sauceRecipe
To make pasta, combine flour, canned pumpkin and eggs in pasta maker and extrude. Add more flour if pasta is sticky.
To make sauce, combine Benedictine and Brandy, heavy cream, cheeses and hot sauce and bring to light boil and add to cheeses to melt. Stir constantly.
Toast 1 cup finely chopped walnuts. Cook pasta 3-5 minutes, lesser if fresh.
Spoon cheese sauce over top of pasta and sprinkle with pepper (if desired) and walnuts (lightly). Serves 6 as a dish and 12 as a course.
