Homemade Tagliolini Carmen's Style

List of Ingredients
1 lb. Egg noodle pasta (your choice)
6 tbsp. Olive oil
4-5 oz. chopped pancetta (Italian Bacon)
8 oz. chopped fresh tomato
1 large white onion thin sliced
1 cup of heavy cream
2 cups fresh tomato basil sauce
1/2 cup grated parmesean
Salt & pepper to taste
1/2 cup chopped parsley
Recipe
Cook pasta in boiling water. In a large sautee pan on medium heat, start 2 tbsp olive oil with onion, cover with lid.
Let it cook for 2 minutes, uncovered and stir until onion softens and turns a carmel color.
Remove from pan and set aside.
With a paper towel remove andy access from pan and start on medium heat with the rest of the olive oil and pancetaa.
Cook until crisp.
Now add zucchini and cook for 1 more minute.
Now add cream, carmelized onions, fresh tomato and tomato sauce. Salt and pepper to ntaste.
Add pasta to sauce and serve.
