    KATHLEEN'S OL' FASHIONED IRISH PASTA SAUCE

    List of Ingredients

    -12 Roma Tomatoes (Peeled, seeded and cut into chunks)
    Tomato Sauce (One 14 oz. can)
    Tomato Paste (One or two Tbs.)
    Green Bell Pepper (About half of a medium one, diced)
    Red Bell Pepper (About half of a medium one, diced)
    Yellow Bell Pepper (About half of a medium one, diced)
    Onion (About a third of a medium one, diced)
    Mushrooms (Fresh are generally better . . . Bottled OK)
    Olive Oil
    Sugar (1 heaping Tbs.)
    Basil (fresh, chopped--to taste)
    Oregano (to taste)
    Garlic
    Parsley (finely chopped)

    Recipe

    ~Briefly boil, then cool the tomatoes to make peeling easier.
    ~Mince or press the garlic.
    ~Saute the peppers, onions and mushrooms in a couple of capfulls of olive oil.
    ~Add the chopped tomatoes, tomato sauce, tomato paste, herbs, garlic, some of the parsley and sugar.

    Allow to simmer together until flavors blend.
    (Probably wouldn't hurt a bit to add dry red wine to taste.)

    Sauce is great with ANY type of pasta. (Garnished with parsley)
