12 oz Anthony's Linguine
1-1/2 cup arugula, coarsely chopped
1/2 cup yellow onion, thinly sliced
1/2 teaspoon freshly ground pepper
1/3 teaspoon kosher salt
1/4 cup parmesan cheese, grated
1 cup freshly cooked bacon, chopped
1 tablespoon balsamic vinegar
1 tablespoon garlic clove, thinly sliced
2 cups roma tomatoes, peeled and diced large
2 tablespoons olive oil
3/4 cup chicken stock
Recipe
Cook and drain pasta according to package directions. Meanwhile, heat olive oil in a large pot. Saute onions for 2 minutes. Add garlic; cook for 2 more minutes. Add tomatoes and season with salt and pepper. Cook for 5 minutes. Add chicken stock and balsamic vinegar. Simmer for 2 minutes. Toss arugula into pot. Cook and stir well for 2 minutes. Add hot linguine. Mix all ingredients together. Portion into warm pasta bowls, sprinkle with bacon and parmesan. Serve immediately.
