List of Ingredients
3-4 lbs smoked sausage or polaska kielbasa
2lbs. wide egg noodles
2 large onions (your favorites)
1ea green, red, yellow peppers
2 32oz cans tomato sauce
1 32oz can crushed tomatoes
1 8oz can tomato paste
4-5 garlic cloves (crushed)
1tbsp basil
1tbsp black pepper
1tsp cayenne pepper
or crushed red pepper
1tbsp oregano
1tsp ground cumin
2tbsp brown sugar
3tbsp olive oilRecipe
Chop onions and sauté in
the oil until clear.
Chop and add the peppers, sauté 5min.
Quarter and slice the sausage
and add to the onions and
peppers, sauté 5mins.
Add tomato sauce, crushed tomatoes, tomato paste and all the spices. Bring to a boil and then reduce heat to a simmer. Cook noodles per package and ladle over finished noodles. Serve with some French or garlic bread. VARIATIONS: You can substitute rice for noodles and even add mushrooms if you like. This concoction will tolerate any additions even chicken or shrimp.
Serves 8-10 hungry firefighters with plenty left over for that 2am feed after a good "worker".
