Palmers Cheese and Macaroni

List of Ingredients
4 Tablespoon butter
4 Tablespoon flour
2 Cups milk
3/4 Teaspoon salt
1/2 Teaspoon copped garlic
1 Teaspoon chopped scallion
1/4 Cup small dice Black Forest ham
1 Pound Cavatopi pasta
8 Ounces Parmesan cheese
4 Ounces cheddar cheese
4 Ounces mozzarella cheese
4 Ounces Gruyere cheese
1/4 Cup breadcrumbsRecipe
1. Melt butter in heavy saucepan, add flour and stir.
2. Cook roux mixture over low flame till it has the consistency of wet sand.
3. Add the milk slowly while whisking mixture.
4. When all the milk is incorporated and sauce is smooth, cook over low flame for 20 min stirring constantly.
5. Cook pasta in salted boiling water till soft, drain and cool.
6. In a small saute pan, in a little vegetable oil, saute ham, scallion, and garlic aprox. 3 min. and set aside.
7. Mix all cheeses and breadcrumbs together in a bowl.
8. In a large bowl place pasta, hot sauce, 3/4 of the cheese mixture, garlic scallions and black forest ham mix till all ingredients are incorporated evenly.
9. In a 3 quart greased baking dish pour pasta mixture and top with remaining cheese mix.
10. Bake in preheated oven uncovered for about 30 min till top is golden brown and crispy.
