1-2 lbs. of favorite pasta (ziti, rigatoni, penne, etc.)
2 heads of escarole
2 tbs. minced garlic
1-2 cans of anchovies
1/4 c. olive oil
½ c. Romano cheese
salt & pepper to taste
Recipe
In a large saute pan, saute escarole, and anchovies in olive oil and garlic. Add already cooked pasta, mix in and add cheese,salt and pepper. Serve.
