    12 ounces lasagna noodles
    1/2 cup grated Parmesan cheese (optional)
    2 tablespoons chopped fresh basil or 2 teaspoons dried basil
    1/2 teaspoon freshly ground black pepper

    For the Sauce

    3 cloves garlic, minced
    3 medium tomatoes, seeded and chopped (about 3 cups)
    1 cup reduced-sodium chicken or vegetable broth
    1 package (10 ounces) frozen, thawed chopped spinach, drained and squeezed dry

    Recipe



    Cook pasta according to package directions, but do not add salt. Drain in a colander. Cut each noodle into thirds.


    Meanwhile, prepare sauce. Spray a large nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add garlic. Cook, stirring, until golden, about l minute. Add tomatoes and broth. Cook, stirring, for 5 minutes.


    Add spinach to skillet. Cook, stirring constantly, until heated through, about 5 minutes.


    Place noodles in a large bowl. Add sauce, Parmesan, basil, and pepper. Toss to combine. Serve immediately.

    Serves 4.
