the perfect meat sauce
List of Ingredients
½ cup finely diced celery
½ cup finely diced carrot
½ cup finely diced shallots
½ cup finely diced mushrooms
4 ounces minced pancetta
4T olive oil
1/2t red chile flakes
2t dried oregano
6 fresh basil leaves
1and 1/2# finely diced pork shoulder (blade steaks work wonderfully)
1 cup white wine
48 ounces canned whole tomatoes (San Marzano tomatoes work best)
2T tomato paste
salt and pepper to taste
Recipe
Place the oil in a large pot over medium high heat and brown the pork and pancetta together.
Reserve pork to a work bowl and add all the vegetables, herbs, spices and tomato paste to the pot.
Cook until nicely colored up and shallots are glassy.
Add the wine and when simmering, cook for 2-3 minutes at a boil.
While cooking, crush the tomatoes by hand and reserve.
Add the tomatoes and all their juices, bring to a boil.
Reduce heat to maintain a simmer and cook, covered, for 60 minutes.
Remove cover and cook until sauce is tight and ‘water’ has evaporated.
Season with sea salt and freshly ground black pepper and utilize as needed.
