List of Ingredients
• 2 tablespoons olive oil
• 1 yellow onion, diced small
• 1 red bell pepper, diced small
• 2 bananas, sliced
• 1/4 cup pineapple juice
• Juice of 3 oranges
• Juice of 2 limes
• 1/4 cup chopped fresh cilantro
• 3 to 4 tablespoons minced habanero chiles or 1/3 cup habanero-based hot sauce
• 2 teaspoons margarine
• 1/4 cup grated parmesan cheese
• 1 pound dried fettuccini
• Salt and freshly cracked black pepper to taste Recipe
In a large sauce pan, heat the oil and saute the onion and red bell pepper in it over medium heat for about 4 minutes. Add the bananas and the pineapple and orange juices. Simmer over medium heat for 5 minutes, until the bananas are soft. Remove from heat, add lime juice, cilantro, habaneros or Inner Beauty, and 3 tablespoons of the parmesan cheese, and mix well.
In boiling salted water, cook the fettuccini until al dente, about 8 to 10 minutes. Drain and place in a large bowl.
Add the chile mixture and mix well. Season with salt and pepper and garnish with the remaining grated parmesan.
