    Penne with Cajun Chicken Cream

    List of Ingredients




    3/4 pound penne pasta
    1 1/2 - 2 pounds boneless skinless chicken breast
    2 tablespoons Cajun seasoning
    4 tablespoons olive oil
    1 tablespoon fresh chopped garlic
    8 ounces heavy cream (optional)
    12 ounces chicken stock
    1/2 cup bleu cheese
    1/2 cup green onion slivers

    Recipe



    Cook pasta in salted boiling water until just tender; rinse and save
    Season chicken with Cajun seasoning and sear in 2 tablespoons of olive oil over medium high heat in fry pan until golden brown.
    Finish cooking in oven at 400F until 160F internal temperature has been reached, about 15 minutes
    Cool and cut into 2" strips
    Heat 2 tablespoons of olive oil in saute pan over medium high heat and sweat chopped garlic until it just starts to turn (light golden)
    Add chicken stock and allow to reduce
    If adding heavy cream, only add 4 ounces chicken stock and allow to thicken slightly
    Toss with chicken strips, pasta, and bleu cheese until heated through and serve
    Garnish with green onion slivers
    Note: flavor can be adjusted by adding more Cajun seasoning or bleu cheese

    Accompaniment: crusty bread, salad, crisp Chardonnay
