List of Ingredients
6 tbs. olive oil
1 clove garlic (chopped)
1 red pepper (julianne)
12 oz. can chick peas (drained)
2 chicken breasts (cubed)
10 oz. fresh spinach (cleaned)
14.5 oz. can stewed tomatoes
1 lb. (16 oz.) Ronzoni rotini
2 cups (8 oz.) shredded mozzarella (cubed)
½ tsp. salt & pepperRecipe
In a large pan, heat oil, sauté garlic for 1 minute, add red pepper and sauté for additional 3 minutes. Next, add chick peas and chicken breast, continue to cook until chicken is no longer pink. Add stewed tomatoes, salt & pepper, simmer for 20 minutes (stirring occasionally). Meanwhile cook pasta according to package directions, drain. Next, layer spinach over ingredients in the pan, simmer 5 minutes. Add the Ronzoni rotini and mix. Transfer mixture to large serving bowl, garnish with mozzarella and serve.
