    1 clove garlic, crushed
    2 tablespoons oil
    2 tablespoons butter
    1 onion, finely chopped
    1/4 pound lean salt pork, diced
    2/3 cup dry white wine
    1 pound tomatoes, chopped
    1 sprig basil
    1 pound spaghetti
    1/4 pound Gruyere cheese, diced

    Recipe



    Fry the garlic in the oil and butter until golden.

    Remove the garlic from pan and fry the onion and salt pork until the onion is soft. Add the white wine and allow to evaporate.

    Add the tomatoes and basil leaves and cook for 10 to 12 minutes, stirring frequently.

    Cook the spaghetti in boiling salted water, drain and add to the sauce. Sprinkle with Gruyere cheese and serve immediately.

    Serves 4 to 5
