    SPICY CHICKEN BREAST ON LINGUINE

    List of Ingredients




    8 each pre-grilled Chicken Breast sliced into 5 pieces each

    1/4 cup Paul Purdonme's Seafood Magic Spice

    3 Pounds Linguine cooked (al Dente) lightly oiled

    Fresh Tomato Basil Wine Sauce:

    Mix together in Non Reactive Container

    3 lbs. Roma Tomatoes Diced Medium

    2 ea. Red Onions Diced Medium

    1/2 cup minced Garlic

    1 cup Basil cut into thin strips

    3 cups olive oil

    3 cups dry white wine

    kosher salt and fresh ground pepper to taste

    2 cups fresh graded Parmesan cheese

    Recipe



    Lightly oil a large sauté pan on men high heat toss chicken pieces with the spice mix until will coated with the spice. Sear breast until hot, drain on paper towels. Keep warm.

    Ladle Tomato basil wine sauce into sauté pan and heat through. Then add linguine, and toss until hot.

    Pour pasta into serving bowl and top with sliced chicken and sprinkle Parmesan cheese and add a fresh whole Basil leaf as a garnish.
