1 lb spaghetti or capellini (angel hair)
2/3 cup onion, finely chopped
1/4 cup carrot, finely chopped
1/4 cup celery, finely chopped
6 tbsp Tre Stelle Olive Oil
1 can diced tomatoes
1 cup fresh basil
Salt and pepper to taste
1 454 g Tre Stelle Mozzarella, cut into 1/4 cubes
1 cup dried bread crumbs
1 tbsp Tre Stelle Olive Oil
Recipe
In a medium sauce pan add 6 tablespoons of Tre Stelle Olive Oil, onion, carrot and celery.
Sauté gently until vegetables are translucent. Season with salt and pepper. Add the tomatoes and basil. Stir well and cover saucepan with lid ajar and simmer gently for 50 minutes.
Pre heat oven to 325ºF. Grease a 9 ring mold or bundt pan with 1 tablespoon of Tre Stelle Olive Oil and coat the bottom and sides of pan with bread crumbs. In a large pot of boiling salted water, add spaghetti. Cook pasta according to direction on package. Drain pasta and place in a large bowl. Pour half of the tomato sauce over the pasta and pack into pan slightly. Place in oven and bake for 15 minutes. Invert pan onto platter and fill centre with remaining tomato sauce.
Serves 4 - 6.
