16 ounces penne or elbow macaroni
1 cup grape tomatoes, halved
1 red bell pepper, cut in small strips
2 jalapenos, minced
1 large sweet onion, halved, thinly sliced
1 or 2 ripe avocados, peeled, diced
1/4 cup chopped fresh cilantro
1 cup reduced-fat mayonnaise
1 cup tomato salsa
1 tablespoon fresh lime juice
1 teaspoon salt
Recipe
Yield: 8 to 10 servings
Cook pasta according to Dreamfields package directions. Drain and
quickly rinse with cool water. Set aside to drain thoroughly. Place
pasta in a large bowl and toss lightly with halved tomatoes, bell
pepper, jalapenos, onion, diced avocado and cilantro. For dressing,
whisk mayo with salsa, lime juice and salt. Toss with pasta mixture.
