    SPAGHETTI SAUCE: Yield: 1 gallon

    1 gallon water

    32 ounces tomato paste

    8 ounces olive oil

    1/2 ounce baking soda

    1 ounce salt

    1/2 ounce pepper

    1 cup onions, chopped

    1 cup celery, chopped

    1 cup bell peppers, chopped

    1/2 cup Italian parsley, finely chopped

    2 Tbsp. garlic, minced

    Recipe



    Combine onions, celery, garlic, peppers with olive oil in extra heavy aluminum stockpot. Simmer until vegetables are tender. Stir in tomatoes along with all other ingredients. Cook over medium heat, stirring often until sauce is reduced to a medium consistency, approximately 6 hours.

    MEATBALLS: Yield: 40 meatballs

    3 pounds ground beef

    1/2 pound ground veal

    1/2 pound ground pork

    1 1/2 ounce salt

    1/2 ounce pepper

    1/2 pound onions, chopped

    1/4 ounce parsley, chopped

    1/4 ounce garlic, minced

    6 eggs

    1/2 pound cracker meal, fine grind

    Mix all ingredients very well, Roll into 2-ounce balls. Place on sheet pans. Bake at 275 degrees until internal temperature is 165 degrees.
