Spiced Pickled Onions and Peppers

List of Ingredients
1 cup cider vinegar
2 tbsp honey
1 bay leaf
1/4 tsp mustard seeds
1/4 tsp whole allspice
1/4 tsp anise seed
2 sweet onions sliced into rings
1 bell pepper seeded and sliced into rings
2 tbsp diced jalapeno peppers
1 tbsp cilantro
Recipe
In a medium saucepan combine vinegar, honey, bay leaf (crushed), mustard seed, allspice, anise seed and bring to a boil.
Boil 3 minutes.
Add onions and stir until limp for about 2 to 3 minutes.
Remove from heat, stir in bell peppers, jalapeno pepper and cilantro. Cool. Spoon into two pint jars. Divided the liquid and pour equal amounts into each jar.
Cover and refrigerate up to a week.
