3/4 LB ITALIAN HOT SAUSAGE
8 OZ HOT TACO SAUCE
5 OZ SHREDDED COLBY CHEESE
5 OZ SHREDDED PEPPERJACK CHEESE
2 TABLESPOONS OLIVE OIL
1/2 TSPN CRUSHED RED HOT PEPPER
1/2 CUP DICED RED ONION
5 OZ DICED JALEPENOS CHILES

SAUTE THE SAUSAGE IN A SKILLET OVER MEDIUM HEAT IN THE OLIVE OIL FOR ABOUT 10 TO 12 MINUTES. REMOVE AND THEN DRAIN ON PAPER TOWELS AND LET COOL A FEW MINUTES. PROCEED TO SLICE THE SAUSAGE INTO 1/4" THICK PIECES.
SPREAD THE HOT TACO SAUCE ON A 12" OR 13" PIZZA EVENLY. ITS NOT NECESSARY TO USE ALL 8 OZ BUT COVER THE PIZZA.
IN A CIRCULAR CIRCLE STARTING FROM THE CENTER PLACE THE SAUSAGE SLICES ALL AROUND THE PIZZA EXTENDING FROM THE CENTER TO THE OUTSIDE EDGE SO THAT IT COVERS THE ENTIRE PIZZA. SPRINKLE THE DICED RED ONION IN THE CENTER FORMING A CIRCLE ABOUT 5" ACROSS. TAKE THE GREEN CHILIS AND EXTEND THE CIRCLE SORT OF FORMING A BULLS EYE. THEN LET THE PIZZA RISE FOR 30 MINUTES.
PREHEAT THE OVEN TO 450 DEGREEES AND BAKKE FOR ABOUT 8 MINUTES. REMOVE AND SPREAD THE COLBY CHEESE OVER THE DICED ONION AND THE JALEPENOS. SPREAD THE PEPPERJACK CHEESE OVER THE REST OF THE PIZZA.SPRINKLE THE CRUSHED RED HOT PEPPER OVER THE WHOLE PIZZA AND BAKE FOR ANOTHER 5 MINUTES OR UNTIL THE BOTTOM HAS TURNED GOLDEN BROWN AND THE CHEESE HAS MELTED. REMOVE AND LET COOL A MINUTE AND THEN SLICE AND SERVE.
