Barbecued Chicken Pizza

List of Ingredients
1 1/2 teaspoons Williams (or other dry-sweet) rib rub
6 ounces skinless, boneless chicken breast
1 tablespoon honey
1/2 cup barbecue sauce (such as "Blues Hog" brand from Sappington
Farmer's Market)
6 ounces refrigerated or handmade pizza dough (see recipe)
1/2 cup shredded Cheddar cheese
1/2 cup shredded Jack cheese
1/2 cup shredded Swiss cheese
2 tablespoons thinly sliced red onionRecipe
Sprinkle rub on chicken; smoke over hickory until the internal
temperature reaches 165 degrees. Let cool, then dice chicken into
1/2-inch pieces.
Place a baking stone in the oven; preheat the oven to 425 degrees.
Stir honey into barbecue sauce; set aside.
Roll pizza dough thin, into about a 10-inch rough circle; bake on the
hot stone 3 minutes. Remove from the oven; spread sauce over the
crust. Top with chicken, then cheeses and onion. Return to the oven;
bake until crust is browned, 9 to 11 minutes.
Yield: 1 (10-inch) pizza; 2 servings
