    CHICAGO STYLE STUFFED SPINACH PIZZA

    1 box Jiffy Pizza Crust
    1 can pizza sauce
    1 bag of spinach
    2 cups shredded mozzarella cheese
    fresh grated romano chesse
    red pepper flakes
    nutmeg
    coarsely chopped fresh basil, for garnish

    Recipe



    Prepare the pizza dough according to the package directions. Roll out the dough ball and place in a 9" pie pan. Trim off the excess dough and set aside. Bake the pie shell in a 450 degree oven for about 5-8 minutes (until golden brown). Set aside to cool. Roughly chop the spinach. Combine spinach and cheese in a bowl, season with nutmeg and red pepper to taste. This should be enough filling for two pizzas. When pizza crust is cool to the touch, pack with spinach cheese mixture. Press down each layer, but do not pack to tightly. Fill the shell so that it is a little above the rim of the pie pan. Take dough ball that was set aside and roll out as a lid. Place on top of pizza pie. Spread sauce on top, making sure to get sauce along all exposed dough so that it does not burn. Place pie in 450 degree oven for 35-40 minutes. Remove from oven and sprinkle romano and red pepper on top. Garnish with fresh basil.
