Dollywood's Indian Fry Bread Pizza

2 cups flour
4 tsp baking powder
1/4 tsp soda
3/4 tsp salt
2 TBSP butter
2 TBSP shortening
1 cup buttermilk, chilledRecipe
In a large bowl, combine flour, baking powder, baking soda and
salt. Rub butter and shortening into dry ingredients. (The faster,
the better.) Make a hole in the center and pour in the buttermilk.
Stir until the dough comes together and is very sticky. Remove dough
from the bowl onto a floured surface and knead and fold 5 or 6 times.
Press until 1" thick and cut into 2" pieces. With rolling pin, roll
out flat until1/4 inch thick. Preheat iron skillet with a little
vegetable oil. Place crust in skillet and top with 2 oz picante sauce,
1 oz seasoned chicken breast, 1& 1/2 oz Monterey Jack cheese, 2 TBSP
mixed onions/green/red peppers and 1 oz black olives. Bake in a 350
deg oven until golden brown. Top with sour cream and taco sauce.
Indian Fry Bread is a traditional bread of several tribes of American
Indians.
To make traditional fry bread, proceed exactly as above. When you
have rolled out the bread. Fry in the cast iron skillet with a little
vegetable oil until brown on the bottom. Turn and allow to finish
cooking. The finished bread is good used exactly like any other
bread or is very good sprinkle with powdered sugar and served
with your favorite fruit.
