    1 18-ounce pizza dough ball
    6 ounces traditional red pizza sauce
    10 ounces shredded 50/50 mozzarella/provolone cheese blend
    4 ounces whole-link Italian garlic chicken sausage, precooked
    4 ounces sliced green bell pepper
    4 ounces caramelized red onion
    2 ounces roasted garlic

    Form dough into 16-inch circle; spread with pizza sauce to 1/2 inch of edge. Sprinkle evenly with cheese. Top with sausage, green pepper, caramelized onion and garlic. Bake in 570 F wood-burning oven 4 minutes, rotating frequently.

    To prepare chicken sausage: Place 5 pounds chicken sausage in large skillet; cover with water. Cover; simmer 20 minutes. Pour off water; over medium-low heat, roast sausage in pan until browned. Cool; slice lengthwise, then cut into 1/8-inch slices.

    To carameliz onions: Slice 3 medium red onions. In large skillet, heat 3 tablespoons olive oil; add onions. Sprinkle with 1 tablespoon kosher salt and freshly ground black pepper. Saute until tender and light brown.

    To roast garlic: Coat 2 pounds whole peeled garlic cloves with 4 tablespoon olive oil. Wrap in aluminum foil; place on sheet pan. Roast at 450 F for 1 hour and 15 minutes until soft and brown.

    Makes one 16-inch pizza
