    2 whole wheat tortillas
    2 teaspoon olive oil
    1 small tomato, thinly sliced
    1 small green pepper, seeded, thinly sliced
    1 fresh jalapeno pepper, seeded, thinly sliced
    1/2 cup shredded, cooked chicken
    2 tomatillos, brown husks removed,sliced
    2 tablespoons sliced black or green olives
    1/2 cup shredded mozzarella cheese
    2 tablespoons fresh grated Parmesan cheese
    a few shredded basil leaves
    fresh rosemary leaves
    3 tablespoons pine nuts, lightly toasted

    Brush both sides of tortilla with olive oil and put on baking sheet. Arrange all ingredients on tortillas. Top with cheeses. Bake at 450 until cheese melts. Top with basil, rosemary and pie nuts. Cut into quarters.Rio Grande Pepper-and-Corn Salsa
