    List of Ingredients




    1 Mama Mary’s 12 inch Gourmet Pizza Crust
    Olive oil to mist the crust
    1 medium white onion, thinly sliced
    1 medium red bell pepper, thinly sliced
    1 tablespoon olive oil
    4 boneless, skinless chicken breast, grilled and cut into bite size pieces
    1 tablespoon chipotle chilies, chopped
    1 15 ounce can black beans, drained and rinsed
    1 15 ounce can corn, drained and rinsed
    1 teaspoon cumin
    1/3 cup cilantro, chopped
    1 cup prepared Tomatillo Sauce
    2 cups Pepper Jack Cheese, shredded
    1 prepared guacamole, optional
    1 8 ounce container sour cream, optional

    Recipe



    Preheat oven to 450°F.

    Line a vented pizza pan or large baking sheet with parchment baking paper that has been trimmed so edges will not hang over the pan or touch the oven wall. Place pizza crust on the parchment-lined pan. Mist the crust and the rim with olive oil. Set aside.

    In a non-stick skillet heat the oil over medium high heat. Add onion and pepper slices, sauté until tender crisp. Reduce heat and add chicken, chipotle chilies, black beans, corn, cumin and cilantro. Heat and stir to blend flavors. Set aside.

    Spread tomatillo sauce over the crust, top with chicken mixture ending with the cheese.

    Reduce oven temperature to 425º F. Keeping pizza on the pan bake for 12 minutes. To crisp the crust, remove from the parchment-lined pan and place crust directly on the oven rack for 3 additional minutes.

    Cool for 5 minutes, slice and serve.
